Not 100% my own idea, but i had a little lightbulb go on about 3 seconds ago while looking at jessica’s banana bites.
Here’s my new super easy, relatively healthy treat.
a frozen banana
dark or semi-sweet chocolate chips
optional shredded coconut
Before starting, slice up a nanner and put a little spoonful of pb on top of each slice. Unless you want plain jane banana bites, that’s cool too. Put the slices on a plate/parchment paper/whatever’s available, and stick in the freezer for an hour or so. This is very important if you want the pb to stick.
1. Melt the chocolate chips over low heat in a saucepan.
2. Pull out your cold banana and pb slices.
3. Here is where your banana bites can either be pretty and sophisticated, orrr messy and fun. i call those one lagoon creatures.
Classy Banana Bites:
Take a mini muffin tin, or mini muffin cups. Pour a thin layer of melted chocolate on the bottom, place the frozen banana and pb on top, and cover the rest with chocolate. i thought of this after 5 minutes after i ate my first lagoon creature, but i’ll definitely be trying this next time.
Lagoon Creature Banana Bites:
Plop your cold nanner into the chocolate, coat it completely, fish it out with a spoon and place on parchment paper to cool. Drizzle chocolate on any bare spots.
4. Coat with coconut, chopped peanuts, more peanut butter, festive sprinkles (oooo i bet they’d be cute with chocolate jimmies on top..) or whatever you’re feelin’ and enjoy!
(Once you’re done enjoying, stick them back in the freezer so an awesome hard chocolate shell forms.)
These are a balllin’ after-dinner dessert, they’re also good all smushed up in oatmeal.
